Spring Edibles

Spring is a great time for wild salads – nutritious and delicious greens and flower parts abound. There are also fiddlehead ferns and marsh marigolds for cooked vegetables. In this class we’ll go hunting for these wild foods, learn about some others that aren’t yet ready for harvesting, and return to the school to cook up a small snack.  Dress appropriately as we’ll go out rain or shine (but not lightning), and may get our feet wet.

About the Instructor: Johnnie Hyde and her husband Bert have worked as Outward Bound instructors for canoeing and winter dog sledding and camping and have guided private trips. They’ve taken children from infants to teens on extended Boundary Waters and Quetico trips and now are introducing their grandchildren to canoe camping. Both have also worked as EMTs and firefighters with the US Forest Service.
